Over the Rainbow Cake
Kids of all ages love this cake! Both the artist and mathematician in you will enjoy baking this dessert with moist layers of dyed cake mix the colors of the rainbow.
You
can bake this recipe several ways. I did cupcakes and a bundt cake. The best part is biting into the layers of
colors. You can bake it for St. Patrick’s Day, birthdays, or baby showers too!
Makes 21 cupcakes or
1 bunt cake
1 box of white cake mix (16.5 oz)
3 egg whites
1 cup of milk
¼ cup vegetable oil
food coloring bottles (McCormick
.25 oz. vials)
cooking spray
cupcake liners for pan or bundt
cake pan
frosting of your choice (fluffy white or vanilla)
sugar sprinkles (optional)
Preheat oven to 350 degrees if baking cupcakes, or 325 degrees if using a dark bundt cake pan.
Combine cake mix, egg whites, milk, and oil in a medium bowl and mix
with a hand mixer on low speed for 30 seconds until moistened.
Continue to beat
on medium speed for two minutes.
Place
six small bowls on your prep area making sure to put a paper towel underneath
to avoid any food coloring spills.
Using a ¼ cup measuring spoon, pour ¼ cup of cake batter into each bowl. Then repeat with another ¼ cup into each bowl (this will make sure you get even amounts of each color).
To
make cake batter colors, drop the listed amount of color into separate bowls.
Stir immediately until all color is combined.
Red
= 50 drops red
Orange
= 50 yellow + 8 drops of Red
Yellow
= 25 drops of Yellow
Green
= 35 drops of Green
Blue
= 35 drops of Blue
Cupcakes
Using
a small spoon place cake batter into each cupcake liner drop even amounts of
batter into each cupcake liner in reverse rainbow order as follows: violet
first, then blue, green, yellow, orange, and finally red.
Bake in oven for 18 to 21 minutes until cake is done. Let cupackes rest in pan for
5 minutes.
Remove cupcakes onto cooling rack and cool before decorating. **
Bundt Cake
Spray
cooking spray into bundt cake pan. Using a clean spatula, scrape batter from
each bowl into the bundt cake pan in regular
rainbow order as follows: red first, then orange, then yellow, green, blue, and
finally violet.
Bake at 325 degrees for 36 – 40 minutes. Cool in pan on rack
for 5 minutes.
Place a large plate on top of the pan, hold onto the sides, and
flip upside down so the cake goes onto the plate. Cool cake before decorating.
**Decorations: you can either leave the cake plain with no frosting so people can see the rainbow colors – or you can frost with vanilla white frosting to make it look like the “cloud” above the cake. Sprinkle with white or colored sugar sprinkles.
