Secret Ice Cream Cake



This is no written recipe for this so it's been a secret until now. It was handed down to me when my kids where in Kindergarten from another mom. I made it for my daughter’s birthday when she was little and it was such a big hit I make it every summer! 

Secret Ice Cream Cake
24 ice cream sandwiches
1 container of regular Cool Whip (or homemade whipped cream)
chocolate syrup
caramel syrup
chopped up chocolate candies such as Butterfingers, Snickers, Kit Kats, or Skor or Heath toffee bars
strawberry for garnish


Unwrap candies and chop up into bite-size pieces and set aside. Unwrap ice cream sandwiches as you layer…place the first layer of  ice cream sandwiches on the bottom of a large casserole or baking dish (9” x 13” size).  Cut up sandwiches to fill in narrow spaces. 


Spread a layer of Cool Whip topping to cover entire layer of sandwiches. 


Next, drizzle chocolate syrup in one direction over whipped topping, and drizzle caramel syrup in other direction.


Sprinkle half of your chopped chocolate candies on top.


Repeat: layer again with unwrapped ice cream sandwiches, pressing down a bit to make cake more compact. 


Spread Cool Whip to layer on top, drizzle chocolate syrup, then caramel syrup, and finish with the other half of chopped chocolate candies.


Place in freezer for at least four hours or overnight. To serve, take cake out about five minutes before serving. Cut and enjoy!

Super Sixteenth Birthday Party

I had so much fun planning the big, double 16th birthday party for my twins. After spending weeks going down the "Pinterest rabbit hole" where I'd pin photos after photos of party decoration ideas, themes, food, designs and other details, I narrowed it all down and made a party plan! Since the birthday party was for a boy and  a girl I didn't want it to be confused with a Sweet Sixteen with a lot of pink, so I chose neutral colors of seafoam green, royal blue, white and silver.  My first DIY craft idea was of using various size"16" numbers for decoration. I purchased flat, large wooden numbers at my local craft store. Then I pulled photographs from our albums, and photocopied them at a reduced size - (or, you can print out photos from your computer onto copy paper and reduce the size). Back in the Day Bakery Does it Again!! Best Coffee Cake

My homemade coffee cake recipes don't call for actual coffee but they are delicious. Well, I tired another recipe in the fabulous cookbook Back in the Day Bakery Cookbook and this coffee cake is moist, light and has the sweetest crumble in the middle (also has no coffee ). It does take a while so remember to follow the directions to every detail.
