Oven-Baked, not fried, Chicken
Super
easy. Delicious. My healthy version of the traditional BBQ chicken baked right
in your oven. I’ve made this recipe since my children were little and they love
it with fries or even over rice. Try this next time for your new chicken dish!
1 cup tomato juice
1/3 cup apple
cider vinegar
1 ½ teaspoon salt
½ teaspoon red pepper flakes
1 Tablespoon Dijon mustard
2 Tablespoon lemon juice
2 Tablespoon brown sugar
2 Tablespoon Worcestershire sauce
½ cup ketchup
1 large yellow sweet onion, sliced
6 large garlic cloves, minced
2 bay leaves
8 skinless chicken breasts, or
chicken thighs
black pepper to taste
Preheat oven to 300 degrees. In a bowl combine all sauce
ingredients (tomato juice through Worcestershire sauce). Whisk well. In a large
pan, place sliced onion, garlic and bay leaves to cover pan.
Place chicken on top in one layer. Add salt and pepper to taste. Ladle sauce over chicken completely.
Bake at 300 degrees for 45 minutes to 1 hour. Serve with french fries or cornbread.
