Oatmeal Bottom Chocolate Brownies


These brownies are loaded with healthy oats and creamy chocolate. My children’s friends eat these up in one sitting! 

Oat crust and crumble topping
2 ½ cup regular oats, or quick-cooking oats
¾ cup all-purpose flour
¾ cup packed brown sugar
½ teaspoon baking soda
¾ cup butter, melted

Chocolate Brownie Filling
4 oz. unsweetened baking chocolate
2/3 cup butter
2 cups granulated sugar
1 teaspoon vanilla
4 eggs
1 ¼ cups all-purpose flour
1 teaspoon baking power
1 teaspoon salt

Heat oven to 350 degrees. Spray a 9” x 13” baking pan with cooking spray. In a large bowl mix oats, ¾ cup flour, brown sugar, and baking soda. 


Stir in melted ¾ cup butter until combined. Reserve ¾ cup oat mixture for the topping and set aside. Press remaining oat mixture in baking pan. 


Bake for 10 minutes and let cool for 5 minutes. Meanwhile, heat chocolate and 2/3 cup butter over low heat in a saucepan, stirring occasionally until melted. Remove from heat. 


Stir in granulated sugar, vanilla, and eggs. Stir in 1 ¼ cups flour, baking powder, and salt.  Spread filling over baked oat crust. Crumble with reserved oat mixture.


Bake for 30 minutes or until center is set (do not overbake). 


Cool completely and cut into squares. Yum.
