Quick-to-Make Chocolate Cake*
I’ve
baked lots of cakes since I first got married, over twenty years ago, and this one is by far the easiest recipe and literally three
steps. The pudding-meets-cake texture makes it so moist and sticky you can eat
it with your fingers. Enjoy!
Quick-to-Make Chocolate Cake
1 ¾ cup flour
1 ¾ cup brown sugar (lightly
packed into cup)
¾ cup cocoa
1 ½ teaspoons baking powder
1 ½ teaspoons baking soda
¼ teaspoon salt
1 ¼ cup buttermilk
1 teaspoon vanilla extract
2 eggs
4 tablespoons vegetable oil
1 cup boiling water (boil on the
stove, do not microwave)
Confectioners/powdered sugar for
dusting
Preheat
oven to 350 degrees. Combine dry ingredients (flour, brown sugar, cocoa, baking
powder, baking soda, and salt) in large mixing bowl and stir with a spoon until
well combined. Slowly whisk in buttermilk, vanilla, eggs, vegetable oil, and
boiling water.
The batter will bubble a bit and look like then pudding.
Pour batter into greased 9” x 12” pan. Bake for 25 minutes, and not one minute more. Cool in pan before serving.
When ready to serve, cut with a knife into jagged pieces (it won’t cut evenly due to the moist texture). Sift powdered sugar just before serving.
